The dough of danish bread and corristant are sheet and laminated many times and filled with oil, so the proofing time are longer and need accurate temperature and humidity control system.
Pans and trays can be handled by the proofing room. Different tray types can be used as long as their outer dimensions are equal. The proofing room has several racks that consist of one or more levels, making the proofing time and capacity flexible without increasing the floor space.
The proofing room is accommodated with a temperature and humidity control system and insulated housing.
Your product carriers are loaded to and unloaded from the right level of the proofing room using a lift. Multiple products with different proofing times can be placed in the proofer at the same time giving you optimal flexibility in your production.
